Vegetables of the Brassicaceae family, such as kohlrabi and cabbage, contain the sulfur-rich plant secondary metabolites glucosinolates (GLS). Following tissue disruption, GLS hydrolysis by myrosinase often yields bioactive and health-promoting isothiocyanates (ITCs). The role of specifier proteins in GLS breakdown is not yet fully understood; therefore, the tissue-specific influence of specifier proteins on GLS hydrolysis was determined to deepen our understanding on how plants orchestrate GLS metabolism.
